National Drink Wine Day

Tuesday night, we did family night over at the Hahn's!!! It also happened to be National Drink Wine Day!!! And since I enjoy celebrating the little things and haven't bought alcohol since Christmas!!! I figured it was doable..... & I made enchiladas :) and they were so yummy!!!
I even managed to feed the 22 month olds and get the baby to sleep all while Jen went out running!!!!


We got home around 8:30pm and Montgomery was ready for bed...




My enchilada receipe: 
Boil  4-5 chicken breasts
Saultee onions, jalapeño peppers, tomatoes, ( mushrooms if wanted )
Cut chicken
Add 8 oz cream cheese to Saultee pan. 
Add 1/4 can of enchilada mix to Saultee pan.
Now add everything together.
Grease 9x13 pan
Oven 400
Put mixture in shell, add shredded cheese, roll with seam on bottom. Continue till done, depending on shell size 6-8 shells.
Pour 3/4 can and a full can over shells
Sprinkle rest of cheese on top
Cover with foil, bake 30-40 minutes
Sprinkle another bag of chees on top, take off foil and back till cheese melted
Starve with sour cream and tortilla chips
